Trugo Place: Q&A with Head Chef Anna
In early 2021, we will be opening our stunning new aged care home Japara Trugo Place. We spoke to Anna Ivancic, Head Chef at Japara Trugo Place, to learn more about her background, experience and what to expect from her dishes.
Tell us about your career journey that led to you becoming our new Head Chef at Trugo Place.
After completing my diploma of chef training, I was posted to a 2,000-bed winter resort in the East Croatian highlands. This role gave me an understanding of the importance of ensuring high quality meals for customers and how to keep up this standard.
I then moved to Melbourne and started working in local nursing homes, which allowed me to access several developmental opportunities. To make myself an even more efficient chef, I enrolled in various short courses, with a focus on cooking for the elderly.
All this experience has prepared me to move into the pivotal role of head chef at Trugo Place.
Why did you decide to become a chef?
In Croatia, becoming a chef was a valuable opportunity to get into a stable career. It meant lots of hard work, but it was worthwhile. When I came to Australia, I found that I had an attraction for working with the elderly.
What do you enjoy most about cooking for our residents?
I love seeing their smiling faces when I visit them in the dining rooms each day – it is a tremendous reward for me personally.
What should we look forward to most about your dishes?
I will continue to provide good, healthy and hearty meals, as well as plenty of incredible desserts. There will also be plenty of special occasion cakes, as this is my passion.
What do you enjoy doing in your free time?
I enjoy gardening, shopping and socialising with family and friends.

My eyes are two different colours – one brown and the other green – which is incredibly rare!
